Pinned this Italian Orzo Spinach Soup recipe from gimmesomeoven.com, made it …. and it was delicious! The first time I made it, I overcooked it but it was tasty enough to try again. Made it again yesterday. This really only takes 30 minutes to make AND is filled with veggies. It is another great dairy-free vegetarian option for a Soup and Salad Bar.
